Rice sweet pudding Chawal ki Kheer
Ingredients -
Rice - ½ cup
Clarified butter - 3½ tsp
Milk - 1 litre
Sugar - ¼ cup and 2-3 tsp or to taste
Cardamom powder - ½ tsp
Saffron - ½ tsp
Dry fruits -
Almond,cashew nuts, almondette, raisins lotus seeds, dessicated coconut or finely chopped or grated coconut- finely chopped 1 cup
Method -
1. Wash and soak ½ cup rice before ½ an hour of preparing.
2. Roast all dry fruits one by one till light brown in 2 tsp ghee. Don't chop the raisins. Use it whole.
3.Take a wok or milk vessel, Add 1½ tsp clarified butter, hot it, then add the milk. Boil it on a low medium flame. After 1 boil, cook it on a low flame and keep stirring in between.
4. When the milk turns thick and left ½ in the vessel, add cardamom powder and sugar, soaked saffron - soak the saffron before 40 minutes in the warm milk before adding. Mix well.
5. You can add the rose essence, kevda and any aromatic essence at this time.
6. Continuously cook the kheer and stir in between on a low flame, after getting little bit thick, add a bowl of mixed dry fruits. Mix well. After 5-10 minutes, after the rice cooked well and getting the desired Kheer consistency, turn off the flame.
7. Garnish it with some dry fruits, few saffron strands and cardamom powder -optional.
Serve tasty, must have chawal ki kheer, sweet rice pudding in every ritual, festivals and occasions. Have or enjoy healthy, self complete sweet dish, recipe or pudding.
No need to accompany with something else - dish or sides and could enjoy after keeping it in the refrigerator.
